Roasted garlic recipe
Delicious, delicious garlic – so tasty, and so good for you! Did you know that garlic has been used for food and health benefits for over 5,000 years, dating from the building of the Giza pyramids? Many claims have been made through the centuries about the health benefits of garlic, ranging from respiratory improvements to lowering blood pressure. Not being trained in medical science, we cannot endorse any of these claims. However, we at the Hampshire College Farm do know that we love garlic!
This easy, vegan, gluten-free recipe requires nothing but a head of garlic, olive oil, and salt and pepper. Enjoy!
1 head of garlic
2 tbs or more olive oil
salt and pepper to taste
Preheat oven to 425 degrees.
Chop the top off of the head of garlic. Remove the outermost layers of the papery garlic wrapping, but leave the entire head connected and intact at the base.
Wrap the garlic in a piece of aluminum foil, leaving the top open.
Drizzle the olive oil inside the head of garlic until it is completely filled. Add salt and pepper if desired.
Wrap the garlic completely in the aluminum foil and bake on a cookie sheet for about 40 minutes, or until tender and fragrant.
Allow to cool and then gently remove each clove from its papery wrapping. Spread on toast, mash into a hummus or another spread, add to salad dressings, or just use in place of raw garlic.
