In the series “Student Voices,” current students write about the reasons they chose Hampshire and how our educational model works from their perspective.
The Hampshire College farm offers shares each fall in which students can invest. Many students participate, buying access to fresh vegetables, herbs, and flowers and helping to support local agriculture.
The past two years, I grouped together with my modmates to purchase a farm share, and both times it was a good investment. We received an abundance of delicious vegetables, and discovered many new recipes in which to use them.
As part of the farm share, you may receive vegetables that you’ve never cooked before, and you might be looking for helpful recipes. Here are some of the things my friends and I have made using vegetables from our farm share.
Tomato Sauce
If you get the farm share, you’re going to be getting a lot of tomatoes—maybe more than you know what to do with. One simple way to solve this problem is to make tomato sauce. It’s easy to make, you can store it in jars in your fridge, and you can add other vegetables and herbs from the farm share to add extra flavor, such as garlic, carrots, basil, and bay leaves. Sweet Potato Fries
Sweet potatoes are one of my favorite vegetables, and I love to make sweet potato fries as a quick and healthy snack. All you have to do is peel the sweet potatoes, cut them into slices, toss them in olive oil, salt, and whatever spices you like, and let them bake for 15 minutes. Recipe »
Kale Chips
Kale chips are an easy way to use up extra kale. The only ingredients are kale, olive oil, and salt—it’s that simple! These crispy chips are a delicious snack food, and do not take long to make. Recipe »
Scrambled Peppers and Eggs
Some farm share vegetables can also be used in breakfast food. For example, peppers and garlic are a great addition to scrambled eggs or omelets. Recipe »
Potato Leek Soup
If you’re not sure what to do with leeks, this creamy soup may be something to try. It’s a bit more advanced than the other recipes I’ve listed, but it still only takes about an hour to make, and is a delicious way to use up some of your vegetables. Recipe »
